Introducing Nathan Darlington – The Q Train’s New Head Chef.
For nearly two years, The Q Train on the Bellarine has been on track to success. Already winning state and regional awards in food, hospitality, innovation and tourism, The Q Train’s innovations are set to continue. Australia’s only dedicated restaurant train continues to delight locals and tourists alike, and is attracting attention across Australia and internationally.
Already in 2019, The Q Train has been nominated for Victoria’s Best Tourism Restaurant, as well as Victoria’s Best Contemporary Australian Formal Restaurant in the prestigious Savour Awards. It has been a Regional Host for a sold-out Melbourne Food and Wine Festival Event, and a destination/episode venue for MasterChef Australia Season 11.
After forced closure in June for track upgrades, The Q Train is rolling into Winter under the steerage of a new Head Chef – welcome Nathan Darlington! Nathan brings with him a wealth of knowledge of the region, and the world. Nathan is a Michelin star trained chef who has worked under Chris Wheeler and Gordon Ramsey. His philosophy is fresh food and fresh seasonal produce with a creative modern twist and balance of textures and flavours. As a winner of the Lancashire Life Best Young Chef, and his 20 years’ experience in the industry internationally, Nathan is already a true asset to The Q Train team.

Nathan is the newest recruit to The Q Train’s young and dynamic management team, along with CEO Marie-Claire Trotter, Train Manager Daniel Trotter and Sous Chef Stephanie Lloyd. “We’re so pleased to welcome Nathan on board (pun intended!)” says Marie-Claire “His experience, creativity and talent fits in beautifully with our team culture, and he brings an exciting rejuvenation to our service after almost two years of operation.”
Already Nathan and Steph have created an exciting ‘Picnic by the Bay’ themed menu, encapsulating local produce into a winter inspired degustation adventure. “This menu has really got us thinking about how we can ‘wow the customer’ and we believe we have done that.
